Leftover Fridge Frittata (serves two)
Ingredients:
- 1 tbsp olive oil
- 1 onion, finely chopped
- Leftovers (this can include chicken, mushrooms, old bits of cheese, leftover potatoes – anything really. But not lettuce. Roughly chop whatever you can find. You can grate the cheese).
- A knob of butter
- 3 large eggs or 4 medium eggs
- Heat the oil in a frying pan.
- Add the chopped onion and cook until soft.
- Add the knob of butter to the pan and then throw in the mushrooms, fry until they’ve released the sludgy, mushroomy liquid they’re filled with and are starting to take on some colour.
- Throw in all the leftovers, season with salt and pepper and heat through.
- Put the grill on.
- Break the eggs into a jug, lightly whisk and then pour over the hot ingredients in the frying pan.
- Now wait. Don’t be tempted to stir or touch it in any way (hands off, Buster!). After a few minutes, the bottom should be nicely set and nicely browned (you can lift the edge of it with a spatula to check).
- Once this has happened, put the frying pan under the grill to cook and brown the top (make sure you use a frying pan without a plastic handle).
- Use the spatula to divide the frittata into two and serve with lettuce (you knew that lettuce would come in handy, didn’t you?), tomatoes (but not for Nana, of course) and cucumber.
